Time Flies

You’ve all heard the expression, “Time flies when you’re having fun.”  Well, these past few months have flown by, but they have been anything but fun.  Honestly, they’ve been the hardest two months of my life.  Each day seemed to bring a brand new challenge heaped upon the other unresolved trials we were dealing with.  I am happy to say that I finally feel like I can breathe — a little.

I could probably write an entire book on the events of these past several weeks.  But since I don’t care to relive every minute detail of it and I’m sure my readers don’t either, I will make due with a short recap.  So here goes:

Marshall was hospitalized 5 times between November and January.  He was in two comas during December and what we planned on as having a wonderful Christmas all together ended up being spent with Marshall in the hospital and he has no memory of it.  With the help of many many friends we packed and moved a three story house to a two bedroom home three hours away.  It’s been two months of dealing with insurance companies and social security and we are still waiting. We’ve had an assortment of additional medical issues that the entire family has been dealing with.  And we’ve had lots and lots of snow which I think everyone knows I do NOT enjoy.

But, on a high note, Marshall has been doing much better with the ensephalopathy.  He has managed to stay out of the hospital for three weeks now and has been doing well with the diet and has gone back to the Cardio Lab for exercise.  We are slowly getting settled in the house and have found most everything we need although the silverware is still mysteriously nowhere to be found. Orion is finally home with us and being in a different house didn’t even seem to phase him.  He was just thrilled to be with his family.  (Thank you Chrissy and Jeff for being the best foster parents a dog could ever have — you are one of the biggest blessings we have had!)

Lemon Canadian Crown

The last few weeks have been a bit crazy for me and as a result I haven’t been baking.  As a friend once told me, “Baking is my happy place,” which really is true for me.  I have missed the whirr of my KitchenAid and the aroma of sweet smells whafting from my oven.

Last week’s Heavenly Cake baking assignment was the Lemon Canadian Crown.  Fortunately for me, I baked this cake for my husband’s birthday in September.  Out of all the cakes in Rose’s book, Hubby chose this one for his special day.  Since we are not allowed to post about cakes before they have been assigned, I did not post about it at the time.  I figured I would end up making it again when the rest of the group baked it, but with everything going on I wasn’t able to. This cake definitely lived up to its expectations.

The frozen dessert needs to be made at least 5 hours ahead so it can firm up before eating.  It calls for ladyfingers which can be store bought or homemade.  Generally I would have leaped into making the ladyfingers but I didn’t have time so I went with store-bought. You cut the bottoms off and of the ladyfingers and line the pan with them.  It took two packages for this.

TGIF!

Thank Goodness it’s Friday! This week has been crazy at work.  Most people look forward to Friday because they know that once they get through the day they have an entire weekend to relax and get caught up on life.  Well, for the last two and a half years, I haven’t had that little luxury in life.  And just for the record, I really miss it.  For a while I only worked four days a week and that wasn’t too bad.  But now that I am working five days a week, I never get two days off in a row and I always have to work on Saturday.  To make matters worse, as the week progresses, my stress level gets higher and higher.  It seems that people do not plan ahead anymore; and since my boss refuses to turn any orders down, that means that the cake orders keep multiplying as Saturday nears.  And I’m not only talking about  your average quarter sheet birthday cakes either.  People will honestly wait until the day before they want some elaborate sculpted cake.  Seriously, people!  Then of course I have the wedding cakes which are usually on Saturday and can vary in number and complexity.   By the time I get home on Saturday I am literally exhausted.

But this week was not my typical week.  This Monday, instead of getting the store stocked and getting control of the cake room after the cyclone of my typical Saturday, I got to make cakes.  Lots of cakes in fact.  I even “got” to sculpt a car cake.  So it was a busy day and not much time for looking ahead or planning.

Wednesday was the day of the mixed up cakes.  Typically people order tiered cakes  for the weekend but Wednesday we had two 3-tiered cakes and both for 50th Anniversaries.  Cake 1 was for a restaurant and was to be decorated the same as the couple’s original wedding cake.  Cake 2 was for a person who had never had a wedding cake and so their children wanted them to have one on this momentous occasion.  Well, the day went along pretty good and I had both cakes set up but the pickup times were approaching and I was still working on the decorating.   I was just finishing Cake 1 when they came back and said that the customer was there to pick it up. I really wanted to get a picture of it but there wasn’t time so off it went.  I immediately began the decorating of Cake 2 as I knew Customer 2 would be there shortly.  About 5 minutes went by and they came back and said someone from the restaurant was there to pick up their cake.  You cannot imagine my panic as I realized that they had just given Cake 1 to the Cake 2 customer!!!  I absolutely could not believe it. Luckily for all involved, after Customer 2 had loaded the cake into his car (and while Customer 1 was waiting for his cake), he came back into the bakery because he forgot something.  We were able to explain what had happened and  Customer 2 retrieved Cake 1 from his car so that Customer 1 could have it.  Customer 1 was not upset and was actually quite grateful that we had made his cake because it was a last minute order so he left quite happy.  I finished Cake 2 soon after and again it was whisked away before I could get a picture. Happily, Customer 2 liked Cake 2 even better than Cake 1 and so he went home happy.  It was a happy ending for all.  What a relief!

And then we come to today which is Friday.  And because this was not my typical week, this was not my typical Friday either.  I had two large wedding cakes for today and only one wedding cake for tomorrow (Saturday).  Both of the cakes for today were quite time consuming so I spent all day working on them and headed up to deliver them about an hour before they were due.  I was about half way to where they were being delivered when I realized that I had forgotten my camera at the bakery.  I was feeling stressed for time and also didn’t want the cakes in the car any longer than necessary.  But, I finally decided that I would really regret not getting pictures so I turned around and got my camera.  to go back to the bakery and get my camera.  I drove all the way back and then headed to the deliveries for the second time.  I got the first delivery all set up, stood with my camera in hand feeling happy that I had gone back to get it, and looked down to see that the battery was dead.  Are you kidding me? I absolutely could not believe it!. So I ended up using the camera in my phone to get a picture.  I am not sure how it is going to turn out.  I did the same thing for the second delivery.  And by the way, I actually thought I might collapse while delivering the second cake  because for some weird reason they refused to give me a cart. The room I had to deliver to is  downstairs and the elevator that you take to get there is like the slowest elevator I have ever seen in my life.  I had this heavy  heavy cake and I not only had to wait for the stupid elevator to get there but just going down a floor took what seemed like forever.  I  was waiting not only for the stupid elevator to get there but to actually go down to the next floor took forever.  I was so glad when that cake was on the table and all in one piece.

So I survived my day and I survived my week.  And for once in a very long time I get to say, Thank Goodness it’s Friday!

Chocolate Butter Cupcakes

I just finished baking my first assigned recipe from an awesome cookbook called Rose’s Heavenly Cakes.  I have joined a group of internet bakers who are all baking the same recipe each week and blogging about their experience.  The recipe this week was Chocolate Butter Cupcakes.  I was grateful that I was starting out on a somewhat easier recipe because this week has turned into a bit of a challenge for me which resulted in having to cook in a kitchen that is not my own. My husband has Alpha One and needs a liver transplant.  This week he was unexpectedly hospitalized for an infection and I have been staying at the Transplant House near the hospital since it is several hours from our home.  I was a little worried about having everything I needed and since I left home rather hurriedly, I didn’t have time to bring baking things.  I was so happy to see that they had a KitchenAid and they also had muffin pans.  The kitchen actually was beautiful and more spacious than my own, but I felt like a fish out of water not being able to find things when I wanted them.

So there were a few “firsts” in cooking this recipe.  I don’t know if I am strange or what, but I have never sprayed and floured my cupcake liners before.  Most of the time they come right off without a problem but I have had a few times that they didn’t so I figured I’d better follow the instructions  and sprayed and floured the liners.  I noticed when I was icing the cupcakes later on that the papers pulled away very easily.  Another first was using King Arthur cake flour.  When I was in the grocery store I saw the King Arthur flour and since I had never used it before I thought I would give it a try (after all, it cost more than the other brand so it must be better, right?)  Lastly, since I wasn’t at home with all my decorating equipment, I ended up decorating with some products I have never used before.

I was very impressed with how detailed Rose was about each step of the recipe. I mixed the cocoa in the hot water and let it cool.  I mixed the liquid ingredients.  Then  I combined it all for the batter.  The recipe was really quite easy to make.  Unfortunately I didn’t have my usual scoop for filling the cupcake liners so I just scooped them in using a regular spoon.  Into the oven they went.  The first time I checked them they weren’t quite done.  You will see a big dent in one of the cupcakes in the photo where I pressed in a little heavily when I checked.  I gave them a few more minutes and they were done and looked beautiful.

For the icing I wasn’t sure what we were supposed to do so I used one of the recipes recommended by Rose in the introduction  to the cupcake section.  I started out thinking I would make the Egg White Chocolate Buttercream but somehow got confused and did the shopping for the  Golden Neoclassic Buttercream and didn’t realize until I was in the midst of making it that I had switched.  I was intrigued with the golden syrup that Rose talks about but wasn’t sure what it was.  I’m not sure if it is karo syrup that is golden versus the light or dark syrup or of it is some other brand of syrup, but I couldn’t find any so I went with the light karo.  The Golden Neoclassic was very different than any icing I had made before.

The only thing that went a bit different than the instructions was that when I had the corn syrup and sugar in the pan over medium high heat, I was supposed to watch for bubbles at the edge of the pan and let it cook a few more minutes until there were bubbles all over.  Mine went from bubbles on the outer edge to bubbling all over and bubbling out of control in a matter of seconds so I pulled it off right away.  I think this was probably due to the fact that I was working on a stove that I wasn’t familiar with and it was probably cooking a little hotter than indicated.  I was a little worried that it wasn’t going to be the right consistency since we didn’t use a thermometer,  but I went ahead and added it to the eggs.  I whipped it until the bowl had cooled, about 7 minutes, and then added the butter and vanilla.  I then added some chocolate.

Normally I would pipe the frosting onto the cupcake with a large tip, but I didn’t have my equipment and I’m not sure that this icing would have held up well with that.  It seems to be an icing that does better for just spreading .

 

The cupcakes would have been fine without any decoration but I decided that as long as I had all these cupcakes made I would take them to the hospital to give to the nurses as a thank you.  So I tried some nifty little squeeze bottles of Wilton icing I got from the grocery store and some plastic decorating tips. (This made me laugh because only a few months ago I got mad at a friend of mine for using these instead of the regular bags and tips.)   I was much more limited on what I could do, but for a little bit of quick decorating they were fine. The cupcakes were very good.  The texture was more dense than a typical cupcake and they were very chocolatey.  My husband really liked the buttercream as it had a little bit of caramel undertone to the flavor.   I enjoyed the unique flavor of the buttercream as well.  All in all I consider this project a success. I’m really exited about next week’s assignment – Chocolate Covered Strawberry Cake.  And I’m really looking forward to being home in my own kitchen.

At Peace

It is late now and I am back at the Transplant House waiting for my laundry to finish drying. M has been in the hospital at Mayo receiving treatment for an infection that he has.  Now I have to be honest, when I am at home,  laundry is not on my list of favorite things to do.  But tonight as I went through the physical actions of gathering my laundry, taking it downstairs, and sorting it into the machines, I found it surprisingly comforting.  This has been such a roller coaster of a week that I guess just having something so familiar to do makes me feel like my entire world is not in chaos.  I really have been feeling at peace today and I believe it is because I have faith that everything is going to work out in the end. Even though this last year has been full of trials and frustration, I still feel extremely blessed and know that we are being watched over.
